Makkelijke one pot vegan rijst
met vegan worst & kort gebakken groenten
Lunch of avondmaaltijd voor 3 personen, veganistisch.
Bereiding ongeveer 30 minuten.
Bereiding:
1 ?
2 ? cloves
4 celery stalks
2 big ?
250g kale
1 tbsp ? oil
200g brown rice
2 tsp smoked paprika
1 tbsp oregano
1 tbsp thyme
1/4 tsp chili powder
1 can of ? cubes
400 ml veggie stock
Optionally: 300g kale & 1 ? for the side veg & 1/2 tbsp ? oil
2 vegan sausages
Benodigdheden: kleine pan met deksel, saladekom, wok of hapjespan met deksel, kleine mengkom
Chop all the vegetables in small cubes, the garlic finely and the kale roughly (if you didn’t buy a pre chopped version).
Bake the garlic and all the vegetables, except for the kale, in the olive oil in a skillet for 3 min on medium heat. Add the rice, herbs and spices and stir well.
Add the tomato cubes and stock, stir, then put the kale on top. Cover the pan with a lid and cook the rice and veg for 15 minutes on low heat. Then, give it a good stir and let it rest for 5 minutes with the lid on the pan.
You can keep this in the fridge for 5 days, and sauté the kale & tomato, and bake the vegan sausage on the day that you serve the meal.
If you serve it right away, sauté the kale with some salt & pepper, and bake the sausage while the rest is cooking. You can bake the sausage slices in the oven or in a baking pan with a bit of oil.
